what’s for dinner tonight? leftovers!

This Thanksgiving weekend was great; the weather, the food & the company.

It is so hard to judge how much to cook for groups and often we have so many leftovers (not having enough to feed everyone is something I always fear). So what to do with all the food that is left?

Here’s what we are doing:

Turkey Paninis : Stack your turkey on a yummy italian bread, top with mozzarella, spinach, roasted artichoke & garlic spread and then heat it up on a panini press. So simple and so tasty on it’s own or with your favourite soup/salad.

Canadian Living’s Fettuccine Skillet Recipe

Taste of Home’s Homemade Turkey Soup (you can make this, freeze it and then have it one night you don’t feel like cooking)

Turkey Quesadillas: such a tasty quick lunch or dinner. Use flour tortillas, any sauce & toppings you like plus some cheese. Top with another tortilla and bake in the oven until golden brown or on the stove top in a frying pan.  I like it nice and simple : pesto mayo, chopped red onion & shredded mozzarella.

Rachel Ray’s Quick Turkey Croquettes YUM! kids will love this one too.

There are so many things you can do with leftover turkey (or ham), these are just a few favourites!
